Description
Don’t wait until your Birthday to enjoy the sweet, soft, cakey textures of BIRTHDAY CAKE. In fact, don’t wait for DESSERT. These KETO Birthday Cake protein pancakes are super fluffy, extremely low carb, low fat, sugar-free, low calorie, and packed with protein so you can doctor them up however you like (add fats on top, or don’t- up to you and your goals!!).
Ingredients
- 1/3 Cup Isopure Unflavored Whey Protein Powder
- 2 Tablespoons Almond Flour (Anthony’s Brand or Kirkland are finest ground and lowest carbs)
- 3 Tablespoons Oat Fiber – lifesource 500 or Honeyville Brands (Can Sub 2 Tablespoons Coconut Flour)
- 1/4 teaspoon Xantham Gum
- 1 teaspoon Baking Powder
- 2 Tablespoons Powdered Erythritol (or any powdered sweetener of choice)
- Hearty Pinch of Salt
- 6 Tablespoons HOT Water
- 6 Tablespoons of Egg Whites
- 1/2 teaspoon Vanilla Extract
- 10 Drops Cake Batter Extract OOOFlavor Brand (please see suggested amounts for other brands in NOTE 1)
- Sugar-Free Sprinkles (see post for alternate brands!)
Instructions
1.) Combine all dry ingredients (except sprinkles) in a bowl. Whisk until combined well. Add Hot water, egg whites, and extracts and whisk until smooth.
2.) Heat a griddle over medium heat until nice and hot! Grease it with butter or avacado oil spray & Pour the Pancakes onto it (I like to use 1/4 cup to pour). Gently add a few sprinkles to each pancake and press lightly into the batter (or you can stir them into the batter before pouring but they don’t get as evenly distributed). Let pancake cook until 1 side is firm and starting to brown (30-60 seconds) and you may see a bubble two (but they don’t bubble too much). Flip and cook other side for 30 seconds or until cooked through. You will know they are cooked through because they will rise quite a bit and look nice and fluffy!
3.) Serve with with ample amounts of butter and sugarfree maple syrup. 🙂 Add whip cream or whatever your heart desires!
4.) Store leftover pancakes in the refridgerator in an airtight container or ziploc bag. Reheat in the microwave 20 seconds before serving again. Keeps for 3-4 days in the fridge!
Notes
Note 1: Since Amazon no longer sells OOOFlavor Cake Batter extract in the SMALL bottles, you have to order direct from the OOOFlavor website unless you want a bigger bottle (I mean, I think the bigger bottle is worth it because it’s DELICIOUS). But If you want to get OTHER brands, I have found that the amount of extract you need varies WIDELY based on how concentrated it is. You will have to experiment with other brands by taste, but here is generally what I have found for other brands:
Mccormicks Cake Batter Extract : Use 1/4-1/2 teaspoon
Lorann Oil CONCENTRATED Cake Batter Extract : Use only 3-4 drops (this is 4 times more concentrated!)
OOOFlavors Cake Batter Extract: 10 drops seems to do the trick PERFECTLY.
***Any other regular (not concentrated) extract like vanilla or almond extract you can substitute with 1/2 teaspoon for the 10 drops of cake batter if you want to make other flavors of keto protein pancakes 🙂
